Dosing sugar and vodka

So I just want to make sure that dosing vodka helps get rid of nitrates and phosphates. Does it do that by making the skimmer work overtime pulling out more gunk?
If vodka does that, then why do people dose sugar?
 
The idea behind using a blend of carbon sources is to cultivate multiple strains of bacteria rather than culturing a monospecific strain, which creates a more fragile denitrification process. Some folks will supplement with bacteria cultures along with dosing carbon sources to encourage bacterial diversity. Recently though people have been using bio-pellets to culture the bacteria without having to do any dosing. IME they work rather well if you match them to your bioload rather than read the label on the bio-pellet container.
