Romex or AC?

I'm doing some home wiring and I'm a little confused about where I need to use armored cable vs romex. The two places of concern are:

1) in the crawlspace, running along floor joints
2) in the cabinet under the kitchen sink (for the garbage disposal and dishwasher)

Does anyone know?

Just curious but don't local city building codes dictate whether or not Romex can be used in areas like crawl spaces etc?

National electrical Code is what most cities use

Anything has to be better then the old knob and tube I am slowly ridding my house of.

Yeah I'd yank all the knob & tube in my house (I mean hell it goes from the basement all the way to the crawlspace/attic then back down to the rooms (I guess that way they keep it out of the way)... but damn it's like a jungle gym, I think I'll stick with the fish tank related electricity and simply run stranded THHN through conduit in the basement
